100% certified organic Amla grown in Kirtikar Foundation orchards outside Agra. No pesticides, no synthetic inputs. Hand-picked at peak ripeness — typically November through January.
Each batch tested for Vitamin C concentration, ORAC score, moisture, and pesticide residue. Only batches meeting our standards proceed.
Harvested Amla is blanched in hot water — precisely timed at 7 to 10 minutes — to reduce tannins and astringency while preserving the Emblicanins and Vitamin C that define its nutritional value. Unlike juice or oil production, Amla candy is not cold-pressed. The fruit is thermally prepared, then slow-infused through progressive sugar-syrup osmotic dehydration: a traditional preservation technique that locks flavour, structure, and polyphenols into every piece.
Osmotically infused Amla undergoes final drying at 60°C — low enough to retain approximately 67% of natural Vitamin C through the finishing stage. Batches are sterilized and quality-checked before packaging. The finished candy is shelf-stable without artificial preservatives because the osmotic sugar matrix itself inhibits microbial growth — the same principle used in traditional Indian murabba for centuries.
